Using know-how acquired over centuries, Corsican shepherds make ‘Brocciu corse’/‘Brocciu’ from whey leftover from the production of other cheeses, which may vary depending on the microregion of the island (soft or hard-pressed ewe’s and/or goat’s cheese).
