Steviolglycosiden zijn niet-calorische bestanddelen met een zoete smaak en mogen worden gebruikt ter vervanging van sucrose bij de productie van mosterd om zo de houdbaarheid te verlengen en de microbiologische stabiliteit te vergroten (door de verlaging van het suikergehalte wordt het gistingsproces, waarbij suiker als substraat dient, tegengegaan) met behoud van de vereiste organoleptische eigenschappen van het product.
