(e) The official veterinarian must be present throughout ante‑mortem and post‑mortem inspection and carry out regular performance tests to ascertain that the performance of the designated slaughterhouse staff meets specific parameters that the competent authority has set. The official veterinarian is to document the results of these performance tests.

In these circumstances, the official veterinarian shall be present at anti-mortem and post-mortem examinations, shall supervise these activities and carry out regular performance tests to ensure that the performance of the slaughterhouse tasks meets the specific criteria laid down by the competent authority, and shall document the results of those performance tests. Detailed rules for the performance tests shall be laid down in accordance with the procedure set out in Article 18.

3. When the animals have been slaughtered at the holding, the official veterinarian shall check the certificate issued and signed by the private veterinarian or by a veterinarian authorised by the competent authority attesting to a favourable result of ante-mortem inspection, correct slaughter and bleeding and the time of slaughter.
3.
